Baked Cheddar Mushrooms

If you having mushrooms there also needs to be garlic and butter it’s practically the law. Once you’ve got those adding cheese, thyme and a few breadcrumbs and roasting in the oven makes a simple supper for one.

Ingredients

Serves 1

2 large flat mushrooms
25g butter
2 cloves garlic
20g cheddar cheese
2 heaped tsp breadcrumbs
a few sprigs of thyme

Instructions

  1. Preheat oven to 180 ℃
  2. Mix the butter, chopped garlic and thyme in a bowl.
  3. Remove the skin from the mushrooms and if it’s too round to sit flat, cut a little off to give it a flat surface to sit on. Spread the garlic butter over the mushrooms.
  4. Bake for about 15 minutes, then add the cheese and breadcrumbs and return to the oven for another 15 minutes.
  5. Great served with garlic bread (spread more of the garlic butter on bread and add to the baking sheet) and a green vegetable.

Key Tip

Adding the cheese and breadcrumbs halfway through ensures the mushrooms will be cooked with the topping being overcooked.
