The gnocchi you can buy ready-made in the supermarket is pretty great, a worthy shortcut for a mid-week meal. This is my go-to recipe for gnocchi, with mushrooms sauteed in plenty of butter and garlic and finished with pine nuts and parsley. With the gnocchi being store-bought this makes a very speedy meal for one. The pack from the supermarket lasted two meals (at least) you could have the rest with tomato sauce or try baking in the oven with leftovers.
Ingredients
Serves 1
1/2 pack supermarket gnocchi
100g Mushrooms
2 cloves Garlic
2 tbsp Butter
Pine nuts
Parsley
Italian hard cheese to serve
Instructions
- Put a pan of water on to boil.
- Chop the mushrooms and fry in a pan over a medium heat with half the butter.
- Boil the gnocchi for 2 minutes, or according to packet instructions.
- Add the garlic to the mushrooms and cook until browned.
- Transfer the gnocchi from the water to the pan with the rest of the butter.
- Add the pine nuts and then parsley to the pan, keep stirring.
- Serve with grated cheese.
Suggestions for leftovers
Baking the rest of the gnocchi gives a different texture and is a great leftovers meal.
