There are a lot of ways to cook a cauliflower steak. I really like cooking it like a steak by frying in butter on a high heat to get a deep umami char and serving with fried cubed potatoes and spinach.
Cutting the cauliflower can be the tricky part. You want to take the middle out and get a flat surface on both sides. Use a sharp knife to make two long cuts on either side of the core, keeping the core intact. I always make quite the mess doing this but thankfully the offcuts can be used in many ways such as this.
Ingredients
Serves 1
a ‘steak’ cut out of the middle of a cauliflower
1/2 tsp garlic powder
1/4 tsp smoked paprika
2 tbsp butter
1 potato
handful spinach
Instructions
- Cut a 5cm/2inch steak out of the centre of the cauliflower by making 2 long clean cuts leaving two flat surfaces.
- Lower the cauliflower steak into a pan of simmering water for 7 minutes. So that it gets cooked through until tender.
- Meanwhile, cut the potato into small cubes, add to the frying pan on a low heat with a good glug of oil.
- Fry the potatoes slowly for about 30 minutes stirring occasionally, then transfer to another pan or keep warm and turn up the heat on the frying pan.
- Mix the garlic powder, paprika, salt and pepper with olive oil and brush over both sides of the cauliflower steak.
- Add to the hot pan with a tablespoon of butter, cook until seared and charred turning halfway through.
- Move to a plate, add some more butter to the pan and sauté the spinach until wilted.
- Serve and enjoy.
Key Tip
Fry at a high temperature with a good amount of butter to get that deep flavorful crispy outside.
