Peanut butter is the ultimate comfort food. Noodles aren’t far behind. That flavour of smoked tofu goes well with those things and brings the dish together. You don’t need much else for an easy and simple comforting supper for one.
Ingredients
Serves 1
1/2 pack smoked tofu
1/2 onion (red or white)
chilli flakes
soy sauce
2 heaped tsp peanut butter
noodles
1/2 cup water
Instructions
Slice the onion and cut the tofu into small cubes.
Fry until cooked.
Cook the noodles according to the packet instructions.
Add the noodles, chilli flakes soy sauce and peanut butter to the pan
Add quite a bit of water to make everything come together into a silky sauce.
Serve.
Key Tip
It’ll be a bit dry unless you really add enough water.
