Pasta with Broccoli and Blue Cheese

Broccoli and blue cheese is one of those classic combinations and it’s classic for a reason. Plus it’s so simple, this whole recipe has only 5 ingredients (and that’s if you count pasta water as an ingredient). Using a pan with a lid can help the broccoli sort of fry/steam which helps it keep its fresh green colour. Plus it’s so quick, everything is done in the time it takes your pasta to cook.

Ingredients

Serves 1

1/2 head broccoli
40g blue cheese
75g pasta (penne or rigatoni would work well)
a tablespoon of butter
pasta water

Instructions

  1. Cook the pasta according to the packet instructions
  2. Heat up a pan and add the broccoli with a splash of water, covering may help speed things up but isn’t necessary.
  3. Add a little pasta water and butter and stir to emulsify. Then add the cooked and drained pasta.
  4. Add the blue cheese and stir into the sauce and pasta.
  5. Serve.

Key Tip

Get several good grinds of black pepper in there.
