Baked Beany Wraps

I can imagine the scene, you’ve bought a whole pack of wraps from the supermarket, you had to, but there’s only one of you. It’s been a few days, you’ve wrapped what you can up in them, but now they’re just not as soft as they were. If you’re thinking Quesadilla I would not blame you, it’s what I’m often thinking. But, how about making a quick spicy bean mix, filling the wraps, covering with cheese and baking in the oven? Sound good too right? You’re welcome.

Ingredients

Serves 1

2 wraps
1 tin mixed beans (if they’re the spicy tomato ones even better)
2 cloves garlic
Tomato puree, cumin, paprika, chilli powder to taste
20g cheddar cheese
your favourite chilli sauce or other condiments

Instructions

  1. Preheat oven to 180 ℃
  2. Put a pan over a medium heat, add the garlic then the beans shortly after.
  3. Add any extra flavour to taste (spices, chilli, anything you want).
  4. Cook for a few minutes.
  5. Add the mixture to your wraps, fold, cover with cheese.
  6. Bake for 20 minutes.
  7. Add chilli sauce, mayo, sour cream or your favourite condiments.

Key Tip

Keep an eye on them in the oven, you don’t want the wrap too crispy!
