Nachos for one

Sometimes you just want nachos for dinner!

Ingredients

Serves 1

tortilla chips
20g cheddar cheese
1/2 the black bean mixture from this
1 avocado
1 lime
sour cream
salsa
pickled jalapeños
optional: pickled red onions

Instructions

  1. Heat the oven to 180℃
  2. Heat the bean mixture up in a small pan until warmed through.
  3. Spread tortilla chips on a baking sheet and grate over cheddar cheese.
  4. Bake for 5 minutes.
  5. Meanwhile, mash the avocado with the juice of half a lime.
  6. Serve, topped with the beans, avocado, sour cream, salsa, jalapeños and pickled red onions.

Suggestions for leftovers

The beans can be made double and stored in the fridge or freezer. Another great use for them is black bean tacos
